Spicy Cauliflower “Rice”

  • 1 head cauliflower
  • 2 yellow onions
  • 8 cloves garlic
  • 2 jalapenos
  • 2 red bell peppers
  • olive oil
  • salt & pepper
  • cumin
  • smoked paprika
  • chili powder
  • juice of 1 lime
  1. In a food processor fitted with an S blade, pulse raw cauliflower until it has a rice like texture.
  2. Finely chop onions and peppers
  3. Mince garlic and jalapenos
  4. In large skillet over medium heat saute onions in olive oil until they just start to brown (should only take a few minutes).  Add garlic and jalapenos and saute them together for one minute.  Then add all of your spices until they are well blended.
  5. Add cauliflower to mixture while maintaining medium heat.  Cook for 10 minutes, stirring frequently.
  6. Reduce heat to low, cook for another five minutes.
  7. Salt and pepper to taste.
  8. Remove from heat and add the juice of one lime.

We mixed in collard greens and lahmacon with ours, but other suggested additions include black beans and corn, or chickpeas with steamed brocolli.  Enjoy!
